Dive into the foundations of the world of wine in a six-week course designed for enthusiastic beginners and aspiring professionals. This Old World-focused format blends instructor-led lectures, guided tasting practice and supplemental study to build a strong understanding of wine’s historical development, grape growing (viticulture), winemaking (viniculture) and leading European wine regions.

Students explore the history of wine and the fundamentals of vineyard and cellar practices, then study classic Old World regions in depth – beginning with France (two-part regional survey), followed by Italy and Spain. The course concludes with a capstone session devoted to sensory evaluation of wine, food-pairing principles and core service skills to support confident enjoyment and professional application.

At the conclusion, students may choose to pursue the Certified Specialist of Wine (CSW) pathway. Students can use study materials and online resources from the Society of Wine Educators (SWE) to support certification preparation (with CSW exam registration handled separately).

More from the Society of Wine Educators (SWE):
The Certified Specialist of Wine (CSW) Exam is a rigorous exam that tests a candidate's wine knowledge and mastery of key elements within the worlds of viticulture and wine production.
