This course provides lab hours to practice and refine advanced cake decorating skills. Topics include advanced fondant skills, overpiping, bridgework, and string work, airbrushing and painting, carving and shaping cakes, and a broad range of gumpaste decorations for both classic and modern design themes. Upon completion, students should be able to conceive, plan, execute, and evaluate complex wedding and specialty cake designs with a focus on meeting both business objectives and client expectations.
