  1. Cook the burgers: shape into 3-4 oz patties, flattened in the center to promote even cooking, season with salt and pepper, grill till desired doneness.
  2. Rub portobello with olive oil, season with salt and pepper, and grill till soft and juices are released.
  3. Toast buns.
  4. Make tapenade mayo: add 2Tb olive tapenade to 1/4c mayo. Squeeze a little lemon juice in, season with salt and pepper.
  5. Make chipotle mayo: add 1Tb chopped chipotles in adobo sauce to 1/4c mayo, squeeze in a little lemon juice, season with salt and pepper.
  6. Add toppings and enjoy!
